• 1 pack macaroni (400g)
  • 2 eggs
  • 1/2 lb grated cheddar cheese
  • 30 oz. evaporated milk
  • 1 onion, finely chopped
  • 1/2 scotch bonnet pepper, finely minced (hot pepper)
  • salt to taste
  • black pepper


What’s Sunday lunch without some good macaroni pie to fill in the space, between some crab and callalo or some good stew chicken? Macaroni pie is as Trini as doubles on the side of the road. Usually found accompanying ’blue’ food, it is also found along with fried rice and even bar-b-cue. Time to cook up  a good Trinidad Macaroni Pie!

Preparation

  1. Preheat oven to 350 deg F
  2. Boil macaroni in water (add some salt) Pro tip: Add a tsp cooking oil so it doesn’t stick together
  3. Beat eggs and combine with chopped onion, hot pepper, cheese, salt, black pepper, and evaporated milk
  4. After the macaroni is boiled, drain and let cool for 2mins
  5. Mix macaroni and egg mixture slowly
  6. Pour mixture into a baked oven-ready dish
  7. Bake for 30-40 minutes
  8. Let cool before serving
