- 6 oz butter
- 6 oz sugar
- 6 oz flour
- 3 eggs

- lemon zest & juice
- orange zest
- vanilla or vanilla essence
- mixed spice

Along with a good black cake, a normal “sponge cake” or vanilla cake is served for Christmas. It’s the yellow cake you get in the tray
Here is a very simple recipe for a home made from scratch cake! There is a trick to this recipe. For every 2 oz butter + 2 oz sugar + 2oz flour there’s one egg. Remember that and you are good to go.
Preparation
- Grease and flour 1 large cake pan or two small ones
- Cream butter and sugar until light & fluffy
- Add eggs one at a time beating well after each one
- Add flavourings – essence etc. as required
- Sift flour and baking powder together 4 times
- Add in flour, in three batches, mixing lightly after each addition of flour
- Put into tin/tins and bake in a moderate oven (350F) for 30 – 35 minutes. The cake is done when a toothpick inserted in the center comes out clean.
- Cool in pan for 5 minutes before turning out on rack

Use 1/2 tsp of baking powder and add flavourings to taste (I usually add a few drops for good measure). Happy baking!
